For 40 to 45 minutes, with the lid down, put the brownies on the grill until a wooden pick put into the middle comes out almost clean (it will have crumbs but should not be moist).
Prepare an oven to 350 degrees and bake for 35 minutes. Set the baking dish aside and give it 10 minutes to cool.

Since an insulated oven's primary function is to keep the set temperature, it makes sense to preheat it to the target level before using it.
To compensate for the expected heat loss during baking caused by the absence of insulation, a gas or charcoal grill must be preheated to temperatures of 500°F to 600°F above the actual baking temperature. Because heat is lost while covering a hot grill and placing a cold, heavy cast-iron pan full of raw ingredients, we must preheat the grill to a higher temperature than the one we aim to bake at.
Indirect heat is essential for grill baking, and the method outlined above works for charcoal and gas grills. The baking takes place on the colder side of the grill. If you put the baking pan directly over the fire, the bottom will burn while the top will be underdone.
Putting whatever you're baking in the indirect zone, away from the heat sources, is the only way to guarantee even cooking. If you want to bake something on the grill, use a cast-iron skillet.
Cast iron maintains heat to ensure optimum baking even when the grill's temperature varies, ensuring top-to-bottom uniform baking. A cast-iron pan is so sturdy that it can withstand the tremendous heat of a grill without cracking, warping, or otherwise losing its original shape or integrity.
The trick is to seek more rustic baked items, such as desserts and quickbreads, that are either more forgiving of varied temperatures or thin enough not to require maintained even heat, as they are best cooked in a cast iron pan.
